Grading systems for agricultural products are important because they help ensure the quality, safety and value of products. They help define the expectations of those in the supply chain.
The Australian Seafood Cooperative Research Centre (CRC) ran from 2007 to 2015. The focus of the research delivered through this centre focused on production efficiency and profitability, as well as lifting the quality, integrity and consistency of products. Through this program, in 2009 oyster grading systems were developed and extended to oyster farmers, processors, wholesalers and brokers, to help with product consistency and to set a common language.

Since these systems were published in 2009, numerous organisations have developed there own grading specifications. These may incorporate new terminology, different size demarcations and alterantive assessments of condition.
