Our Industry

In Australia, oysters are farmed through extensive aquaculture. Production occurs mainly in NSW, SA and Tasmania, although interest and investment in shellfish aquaculture is increasing in WA, Queensland, Victoria and the Northern Territory.

Australian oysters have unique characteristics and flavour profiles that reflect the environment in which they were grown.
This is known as ‘merrior’.
